Whole Roasted Onion

Directions
- Place a rack in the upper third of the oven and preheat oven to 375 degrees F.
- Cut the top and bottom off the onion, but leave most of the skins on.
- Place onion in a suitable baking dish, bottom flat side down.
- Drizzle the olive oil over the onion, and place a thin pat of butter on top.
- Sprinkle generously with Salt and Pepper.
- Bake for 25 minutes at 375 F.
- Increase the oven temperature to 400 degrees F and cook for another 15 to 20 minutes until the onion is completely tender and the top has browned.
- Remove from the oven and allow to cool slightly.
- Remove the skin, slice and enjoy warm.
- When serving as a side dish, top with a rosemary sprig.
Yield: Approximately 1 Whole Roasted Onion.
